Vegetarian cooking on a major budget?

I’m looking for some good veggie recipies.
To narrow it down a bit… I don’t like hummus. And I use dairy products. And I can’t afford those exotic obscure products.
I’ve been eating meat for quite awhile, because of my anti-herbivore husband; but I’ve been missing my old vegetarian cooking. The food just tastes so much better. My husband will eat veggie food, but only if he’s got a side of meat for himself. I want my son to be open to vegetarianism. He’s a year old and obviously prefers veggies and fruit to meat. Anything I could cook for him and me, and then make my husband a chicken ****** on the side or something, would be great.
I’m looking for home cooking, not gourmet.

I know this may be know help, but check out Food Networks website, they have thousands of recipes there. You may have to do some looking around for the perfect recipe though. Good luck!!
(P.S. Also check out there station, there are always dishes be created, and they might be what your looking for!

One way to save on veggies is to buy them frozen instead of fresh. I like to make a nice vegetable stir fry made with broccolli, baby corn, cauliflower, green beans and lots of mushrooms. Add in a little Szechaun sauce and serve with some brown rice.

lets see.. im kinda liek your husband.. i like meat.. but ill eat veggie stuff too.. more like an extreme omnivore.. i eat a lot form both spectrums
okay recipies….
try a melon salad:
musk melon (aka cantelope)- cut into cubes
honeydew – cut in cubes
red onions – cut into rings
light amount of salt (kosher)
medium amount of black pepper ( fine grind)
—First cut up the melon and onion.. Then you need a a woc( oriental fry/cook pan) or a pan you can strifry in.. Just need a lot of heat for a short amout of time.
Get your pan up to heat.. If you hit it with wate droplets it shoudl bead up and race off the pan.. Now place the melon and onions ( already salted and peppered) and lets them cook for roughly… 45-80 seconds…
the point is to have the melon hot on te outside but still juicy and codl on the inside.. its a nice contrast..
Okay now idk if your child could eat that so for him take out the salt/pepper/onions and add watermelon and grapes and a fruit salad for him.
now somethign a chicken ****** could sit beside..
Id suggest some of that microwave rice ( or if you liek to cook rice) either dirty. or yellow grain rice on the side, with a veggie topping..
Now im from the south so here isa meal my Grandma used to make, no meat (that i know of..o.0)
dumplings ( i never ate them with chicken anyway)
collard greens, black eyed peas and/ or green beans…
that was jsut amazing.. =D
and i personally use dot make egg-white omlets inthe morning for breakfast.. non of that egg white stuf in a carton, i just separate dthe yolks..
mine would always be fille dwith cheese, some kinda of meat, and if i had any of thse ( green peppers, onions, tomato)
it was good, but it would have been better if i had a non fat cheese…
anyway hope some of those help.. i know its not much..
but try the food network website.. look up Alton Brown recipies… he has a ton that uses subtitutions, maybe he has some veetarion versions of some reciepies..

As for being on a budget…
Being a vegetarian can be very cheap. Beans are dirt cheap, vegetables and fruits can be found at good prices…
I would suggest trying to find an asian supermarket.
Where I live, everything is always cheaper at an asian market than at a major supermarket. (tofu and vegetables for example)
If you are talking more along the lines of meat substitutes… most supermarkets carry gardenburgers/ boca burgers/ and morning star farm products. As long as you keep up on the sales you should be able to find them at an OK price sometimes.
A while ago my boyfriends mom got me a Huge box of Boca Burgers from BJ’s (20 large burgers I think) for like 8 bucks. (at my supermarket its like $4.99 for a pack of four, so $8 for 20 is a real bargain)

If your husband likes meat, try vegetarian hot dogs. They taste pretty good. Supermarkets sell them.

Soup is always good and relatively cheap to make.
If you have a pressure cooker, you can put a packet of yellow lentils, a chopped onion, some diced carrots, a veggie stock cube and a bit of seasoning (all topped up with water) in for 20-25 minutes and you have some really tasty lentil soup. Ok, I know it’s not quite the right time of year for that, but its really good in the winter. If you must, you could put some ham in it for your husband.
If you don’t have a pressure cooker, you can still make it, it just takes longer.
