What are some great lunch recipes to eat during the day?

I am 14 years old and I am active in the kitchen. I love to cook, but has not cooked anything recently. What can I cook for lunch during summer vacation? I am tired of the same Hot Pockets and other junk I eat for lunch, its time for something healthy, tasteful, and filling. I like to eat gourmet foods that are decent, instead of microwaved foods. This is not Gourmet but it sure is good.
Grilled PBJ
Just grill in butter like a grilled cheese. Brown on both sides. Add a glass of milk and it is great.

Things I like… (I avoid meat though, so my list may be limited)
- frozen Chinese/Japanese dumplings steamed/pan fried and dipped in vinegar and soy sauce
- salads, especially bean salads, tuna salads, salads with roasted veggies on top, etcetera
- homemade salad rolls (the kind wrapped in translucent rice papers)
- homemade macaroni and cheese
- falafels
- curries with store-bought curry paste

grill fish/ chicken ****** on a bed of salad. Sprinkle any fish your choice or chicken with salt and pepper. Grill it on a pan with extra virgin olive oil.
with homemade dressing – honey dijon mustard, apple cider vinegar, a bit of salt and pepper, and olive oil mix well.

GRILLED QUESADILLAS
for 1 quesadilla:
2 tortillas
1/4 c. sliced olives
1/4 c. chopped chicken, pork etc.
1/2 c. shredded cheese
small amount chopped dry onion and green peppers,(hot peppers can be used if desired)
spicy tomato sauce
multiply above ingtedients to make more than one.
Chop and mix filling ingredients together.
Preheat electric grill.
Butter one side of each tortilla.
When grill is hot, lay one tortilla on grill, buttered side down. Spread filling across the tortilla and cover with the other pre-greased tortilla—buttered side up.
Lower the lid of the grill and cook until tortillas have browned and cheese has melted. About 5 minutes.
Serve with tomato sauce.
CHILI RELLENO
1 (27 oz.) can chiles (Ortega is my favorite)
1 1/2 lb. Monterey Jack cheese, grated (or a bit more)
3 or 4 eggs, if X-lg. use 3 (lg. 4)
1/2 c. flour
1 tsp. pepper
1 c. milk
Cut the whole chiles in strips and open to remove all seeds by rinsing each in running cold water. Beat the eggs; add the milk, flour, and pepper; blend to mix.
Layer the chiles and grated cheese into a 7 x 11 greased pan or other similar flat casserole. (I use my Corningware flat oblong one.) Pour the milk mixture over the layered chiles and cheese.
Bake in 325 degree oven for 40-45 minutes or until knife inserted comes out clean. Top should be light brown.
TEX – MEX
Layer in the following order:
2 cans Frito Lay’s bean dip
6 avocado mashed with garlic & lemon juice
2 c. sour cream with 1 pkg. taco sauce mix
2 c. shredded sharp Cheddar cheese
1 can chopped black olives
1 bunch chopped scallions
4 chopped tomatoes
Serve with taco chips.

A GOOD DIET LUNCH
1 chicken breast
1 med. potato
1 can asparagus or green beans
One hour before time to eat, wash and remove skin from chicken ******. Season with Tony’s creole seasoning and wrap in foil. Cut potato in half and season with Tony’s. Then, wrap in foil. Bake in oven at 350 degrees for 1 hour. Heat vegetables and you have a good diet lunch.
